Night Shift Big Cheeze

Night Shift is the dome that keeps its own hours. Black-tea chai steeped straight into the cream base, cultured cream carrying the fat, cachaça-cinnamon warmth folded through, and chicory root grounding the bottom with a coffee-adjacent bitterness that costs nothing and reads imported. Molasses signs it deep. It’s the one you cut into at 11 p.m. telling yourself it’s basically tea. Chicory is bulk-cheap and does half the work. The other half is the cachaça you can’t quite place.

The Look: Dark and steeped. The faceted dome is a deep cocoa-tan, dusted matte in a chai-cocoa blend so the facets run warm-brown with a spiced haze on top. No shine, no garnish — the plainest, most nocturnal-looking dome in the set, which is the point.

Known associate: Night Shift Snitch Snaps — the cracker cut to lock against this exact dome. Bring the accomplice, or bring an excuse.

Storage

Big Cheeze is a fresh dairy dessert. Keep it cold. Refrigerate at 34–40°F (1–4°C) from the moment it lands. Best within 14 days of the dome date sealed, and within 5 days once you’ve cut into it. It travels on ice for the drive to the party and no longer than that. You can freeze a sealed dome for up to 60 days, then thaw it overnight in the fridge, but the facets soften a shade on the way back and any coating loses its snap. Do not leave a dome at room temperature longer than the two hours it takes to disappear anyway. The tea note deepens over the first day as it steeps further into the cream.

Sustainability

Matte cocoa window boxes from recycled paperboard, printed with soy-based inks, the window film compostable where the supplier offers it. Turquoise foil labels food-grade and aluminum-free where sourced. The wax seal is a food-safe paraffin-soy blend. Cultured cream cheese and butter from regional dairy partners. Nuts, cocoa, and spices bought whole and worked in-house. No artificial colors. No high-fructose corn syrup. The color you see is cocoa, cinnamon, fruit, or nut doing the work. Milk, cream, tea, and spice; chicory bulk-cheap; cachaça in essence.
